Quick and Easy Macaroni Salad

Macaroni salad is one of those foods that I steered clear of for a long time. I have memories of eating some that seemed thick and mayo heavy, so I just avoided it. That is until recently, we bought a small container from a farm stand for a snack during a long drive. It was so simple and light, I found myself craving it days later. Sooo I made a similar version at home.

This macaroni salad Is very simple and light with its of flavor and texture. It is lightly coated in a mayonnaise dressing but it’s not heavy. Using a lot of finely diced celery and red onion add a good crunch to the salad and fresh dill gives the salad flavor. A little bit of relish adds sweetness to balance out the salad.

I have made this salad several times over the last few weeks, it always seems to disappear very quickly. It might even be better after it sits in the fridge for a day. Making it the perfect dish to bring to a cookout. It will be a hit and you can make it the day before if you are short on time.

Ingredients

  • 1 box of pasta, (I like elbows for this but use whatever your favorite shape is) 
  • 1 cup celery, finely diced
  • 3/4 cup red onion, finely diced
  • 1/4 cup mayonnaise
  • 3 tablespoons white wine vinegar
  • 3 tablespoons sweet relish
  • 3 tablespoons fresh dill, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper 

Instructions

  1. COOK: Bring a large pot of salted water to a boil and cook the pasta according to the package directions. Drain and rinse with cold water to cool. 
  2. COMBINE: To a large bowl, add the cooked macaroni, celery and onion. In a small bowl combine the mayo, vinegar, relish, dill, salt and pepper. Mix until all the ingredients are well incorporated. 
  3. MIX: Add the mayo mixture to the large bowl with the pasta. Stir the mayo into the pasta, celery and onion until everything is evenly combined. Taste and adjust seasoning to your preference. Enjoy!
