Everything Bagel Bites

An everything bagel with cream cheese might just be my favorite breakfast. I always want the bagel with the most ‘everythings’ on it, lightly toasted and smothered in cream cheese. This snack takes that idea and makes it a totally poppable delicious treat.

I know they are a little naughty, but using store-bought canned biscuits helps these come together so easily. The biscuits act as the bread or bagel in these bites. I peel each biscuit in half to create two rounds, or two bites, from one (less bread, more cheese!). The base of the filling is cream cheese and to that I add some cheddar cheese. I like to use Trader Joe’s Unexpected cheddar shreds, but any cheddar will work. Chives and salt add a little more flavor, but I go light on the salt. Most Everything but the Bagel Seasonings have salt in them, but you can adjust the salt in the filling for your own taste preference.

After you have filled each biscuit and shaped it into a ball, roll it in the Everything but the bagel Seasoning. I found that to be the best way to get it to stick. Bake the stuffed biscuits in the oven at 350 until they are nicely browned on top and the biscuits are fully cooked. It is hard to do but make sure you wait a few minutes before biting into them because the cheese will be like super hot cheesy lava inside when it they first come out of the oven.

These bites are perfect to serve if you are hosting a brunch or for a game day snack. I serve them right out of the baking dish and they always seem to disappear quickly.

Everything Bagel Bites

Yield: 16
Prep time: 15 MinCook time: 35 MinTotal time: 50 Min

Ingredients

  • 1 package canned biscuits
  • 1 - 8 oz. package cream cheese
  • 1/2 cup shredded cheddar cheese
  • 1 1/2 tablespoons chives, chopped
  • pinch of salt
  • Everything but the bagel seasoning

Instructions

  1. COMINE: In a bowl, mix together the cream cheese, cheddar cheese, chives and a pinch of salt.
  2. ASSEMBLE: Open the biscuits and split each biscuit into two rounds. Flatten out a bit with your hands and add a spoonful of the cream cheese mixture to the middle. Fold the biscuit dough around the mixture, seal the edges together and roll to make into a ball shape. Continue with the remaining biscuits.
  3. SEASON: Pour some everything but the bagel seasoning into a small bowl. Roll each stuffed biscuit in the seasoning to coat and place in your baking dish.
  4. BAKE: Bake the biscuits at 350 for 35 minutes until they are golden brown on the top and cooked through. Allow to cool a bit before biting into!

Notes:

Depending on your dish, you may want to spray non-stick spray on your baking dish. The buttery biscuits usually don't stick for me but you can add that step if you want to be safe or plan to serve them out of the baking dish.
