Swedish Apple Pie

When it comes to pie, this recipe is hands down my favorite. Not only is it super delicious but also crazy easy to make. It is the pie I always remember my mom making in the fall. We were never a pumpkin pie household, always apple. And I am not a big baker, it’s too scientific and specific (I prefer to throw things together and taste along the way) but every year around this time I have to make this pie.

I like to slice the apples really thin. That's definitely a preference thing, and you can leave them thicker, but I think it helps them to cook up into a jammier filling. And the apples are topped with a sugar cookie type crust coated in cinnamon sugar, rather than a standard pastry pie crust. I think that may be part of the reason I love it so much.

So even if you’re not into baking either, you should give this recipe a try. And when it is baking, it will fill your house with the most amazing smell and the end result is the perfect fall treat. I always serve it up with a big scoop of vanilla ice cream.

Swedish Apple Pie

Ingredients

  • Apples (4-6 depending on size) peeled and thinly sliced
  • 1 cup flour
  • 1 cup sugar + 3 tablespoons
  • 1 stick of butter 
  • 1 egg
  • 1 1/2 teaspoons cinnamon 

Instructions

  1. PREP: Preheat your oven to 350. Peel and cut apples and fill your pie dish, try to create a flat level top.
  2. COMBINE: In a small bowl, combine the 3 tablespoons of sugar with  cinnamon. Sprinkle about half the mixture over the sliced apples.
  3. MIX: In a medium mixing bowl, combine flour, 1 cup sugar, butter and egg.
  4. ASSEMBLE: Pour the dough mixture over the top of the apples and carefully spread to the edges of your pie dish to cover the apples.  Sprinkle the remaining cinnamon sugar mixture over the top of the dough. 
  5. BAKE: Place your pie in the oven to bake for about 40-45 minutes until golden brown.
